  • Potato 500 grams
  • curd 1 cup
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chilli powder
  • 1/4 tsp salt
  • 1/4 tsp kitchen king masala
  • 1/4 tsp kasuri methi
  • 2 green cardamoms
  • 2 cloves
  • 2 bay leaves
  • 1 tsp whole cumin
  • a pinch of asafoetida
  • 8 – 10 cloves garlic
  • 1 piece ginger
  • Onion 2 pieces
  • tomatoes 2 large
  • 1 tsp red chilli powder
  • 1/2 turmeric powder
  • 1 tablespoon coriander powder
  • 1 tsp salt
  • 1 tsp kitchen king masala
  • 1 tsp garam masala
  • 1 tsp kasuri methi
  • Curd 1/2 cup

How to Make Aloo ki Sabji

Turn on the gas and place a pan on the gas on medium flame and allow the oil to heat. After the oil gets heated

take 500 grams of boiled and peeled potatoes and put them in this oil and add spices.

We added 1/4 tsp turmeric powder, 1/4 tsp red chilli powder, 1/4 tsp salt, 1/4 tsp kitchen king masala and 1/4 tsp kasoori methi and fried for 2-3 minutes and transfer the potatoes in another bowl

Now, add a little more oil to the same pan and heat it. Then, add 2 green cardamoms, 2 cloves, 2 bay leaves, 1 teaspoon whole cumin, and a pinch of asafoetida (hing) to this oil and let it crackle on medium flame for 1 minute.

Now, in this pan, we will add 2 large-sized onions chopped along with 8-10 cloves of garlic and a pinch of Ginger, minced. We will fry them on medium flame for 2 minutes

Next, we will add 2 large-sized tomatoes, pureed in a mixer and mix well. Now, we will add the spices.

So, in this pan, we will add 1 teaspoon red chili powder, 1/2 teaspoon turmeric powder, 1 tablespoon coriander powder, 1 teaspoon salt and 1 teaspoon kitchen King Masala, and mix well.

Then, we will add a little water, cover it, and cook until the oil separates from the spices.

Now, we will add 1/2 cup yogurt, whisk it well with a whisker or a spoon and cook continuously on medium flame for 3 to 4 minutes.

When the oil starts separating from the spices, we will add the fried potatoes

and 2-3 cups of water along with one teaspoon Garam Masala and one teaspoon kasoori methi.

Cover and cook for 5-7 minutes. Then, remove the lid and garnish with fresh coriander leaves and serve hot with puris/ chapatis or parathas or aloo puris
