INGREDIENTS OF Aloo Puri Recipe Aloo Poori Recipe

  • 1+1/2 cups Semolina (Suji)
  • 400 grams Potatoes (Aloo)
  • 2 cups Whole Wheat Flour (Gehu ka Atta)
  • 1/2 tsp Carom Seeds (Ajwain)
  • 1 tsp Cumin Seeds (Jeera)
  • 1 tsp Coriander Seeds (Sabut Dhaniya)
  • 1 tsp Kasuri Methi
  • 1 tsp Chili Flakes
  • A pinch of Asafoetida (Hing)
  • 1/2 tsp Turmeric Powder (Haldi)
  • 1 tsp or as per taste Salt
  • Fresh Coriander
  • 2 tbsp Lemon Juice
  • Oil for frying

Firstly, in a bowl add 1+1/2 cups of Semolina (Suji) and mix it well with 1 +1/4 cups of lukewarm water using a spoon until it forms a smooth mixture.

Keep it aside for 10 minutes so that Semolina (Suji) absorbs the water.

Boil 400 grams of potatoes in a pressure cooker until 3 whistles and then turn off the gas.

Take out the potatoes immediately and peel the layer (we don’t want potatoes to absorb water)

Then, we’ll mash the potatoes separately in a bowl to ensure there are no lumps

Now, in the bowl with semolina, add 2 cups of whole wheat flour and mashed potatoes. Along with that, add the spices.

On top of the potatoes, we’ll add ½ teaspoon carom seeds (Ajwain), 1tsp cumin seeds (jeera), 1 tsp coriander seeds (crushed) (Dhaniya powder) one teaspoon Kasuri Methi, 1 tsp chili flakes, a pinch of asafoetida (Hing), ½ tsp turmeric powder, 1 tsp or as per taste salt, chopped coriander, and 2tbsp lemon juice.

Without adding any water, knead the mixture. Once the dough starts to come together well, if it becomes too wet, add a little bit more wheat flour and continue kneading until it’s ready.

If the dough feels a little dry, add a little water and knead. Also, add a little oil and knead the dough well once again. Let the dough rest.

Now, divide the dough into small portions and roll them out into Puris

using a rolling pin for those who don’t know how to roll out puris, Here’s a shortcut:

Take a plastic bag, place a dough portion in it and press it with a plate. The Puris are ready instantly.

Now, turn on the gas and add oil to a frying pan over medium-high heat for frying the puris. When you see a slight smoke rising from the oil, the oil is sufficiently hot.

Then, one by one, gently slide 3-4 Puris into the hot oil, flipping them over as they fry.

Your delicious Aloo puris are now ready serve them hot with chutney or chai
